Why are nitrates from ham or bacon undesirable but nitrates from beets are excellent?

Nitrates on aquaponics systems:

We have been told that nitrates from processed foods react with stomach acids to form carcinogens. I am now hearing that nitrates in beet juice are good for the brain and also for lowering blood pressure. Why the distinction?
